Roasted Chicken and Brandy Soup

1 cup green onions

1/2 cup celery

1/4 cup carrots

2 garlic cloves

1/2 pound of sliced mushrooms

1 tablespoon butter

Sauté.

1/2 cup white wine

3 cups chicken stock

2 teaspoons white wine Worcestershire

1 tablespoon dried parsley

1/2 teaspoon dried thyme

1 teaspoon cracked pepper

2 cloves

1/2 cup roasted chicken

Add to previous and simmer 20 minutes.

1/3 cup Benedictine Brandy

Flambé and add to previous.

 

Dark Balsamic Cod

¼ cup balsamic vinegar

2 cloves garlic

Simmer on medium-high until syrupy.

¼ cup butter

Add to previous and remove from heat.

4 teaspoons extra-virgin olive oil

1 tablespoon lemon juice

Mix.

2 pound skin-on side of cod, bones removed

Brush with previous. Grill on oiled grates for 7 minutes a side, basting again after turning.  When finished drizzle with vinegar before serving.

 

Black Forest Cherry Cake with French Truffle

Cake

2/3 cup butter

1 3/4 cup sugar

Preheat to 350.  Cream together.

3 eggs

1 1/2 teaspoons vanilla

2 cups flour

2/3 cup cocoa

1/4 teaspoon baking powder

1 teaspoon salt

1 1/4 teaspoons baking soda

1/2 cup butter milk

1/2 cup chocolate milk

2 tablespoons chocolate liqueur

Mix with previous and pour into buttered and floured pan bake 30 minutes.

 

Truffle

9 oz semi-sweet chocolate

1 tablespoon milk

Melt and mix smooth.

1/2 cup butter

2 egg yolks

1/4 cup heavy cream

1 cup confectioners sugar

Mix with chocolate and refrigerate.

Maraschino cherries

Take cooled cake and layer with French truffle chocolate.  In the chocolate, on the top only cover with cherry halves.

1 cup heavy cream

1/4 cup confectioners sugar

Whip together and cover sides of cake.

Chocolate shavings

Press chocolate into whip cream along the sides of the cake and use the rest of the whipped cream to border the top and bottom.  Return to refrigerator.

 

 

Chocolate Raspberry Royale Biscotti

2/3 cup walnuts

½ cup butter

¾ cup sugar

2 eggs

2 tablespoons Chambord Liqueur

Preheat oven to 325.  Beat together.

2 ¼ cup flour

1/3 cup cocoa

1 ½ teaspoons baking powder

¼ teaspoon salt

Add to previous.

2/3 cup chopped milk chocolate

Fold into previous.  Divide dough in half and place as two logs (approx. ½ inch thick) on greased and floured cookie sheet.  Bake 25 minutes or until done.  Remove from oven and let cool for 10 minutes.  Cut into ½ inch thick diagonal slices.  Place back on cookie sheet and toast 5 minutes each side.  Remove and cool.

 

Brownies

4 oz. Sweet chocolate

¼ cup butter

Melt and stir.  Preheat oven to 350.

¾ cup sugar

2 eggs

1 teaspoon vanilla

1 teaspoon chocolate liqueur

½ cup flour

½ cup nuts

Add to previous and pour into greased, floured pan.  Bake 35 minutes.
