Gingerbread Houses

½ cup butter

1 cup brown sugar

1 ½ cups molasses

2/3 cup apple juice

2 teaspoons baking soda

2 teaspoons salt

1 teaspoon cinnamon

1 teaspoon ginger

1 teaspoon cloves

1 teaspoon allspice

6 ½ cups flour

Mix all adding flour gradually to form stiff dough.  Press into plaque or cut shapes and bake 350 for 25 minutes.  Cool.

3 egg whites

¾ teaspoon cream of tartar

1 pound confectioner’s sugar

Mix on high for 7 to 10 minutes.  Pipe on and cement pieces of gingerbread.

To make them as cookies don’t use the above, use –

¾ cup butter

¾ cup brown sugar

2 eggs

¼ cup molasses

2 1/3 cups flour

1 teaspoon cinnamon

1 teaspoon ginger

1 teaspoon allspice

1 teaspoon cloves

½ teaspoon baking soda

¼ teaspoon salt

Mix and roll out.  Cut out shapes and place on a greased pan.  Bake cookies at 375 for ten minutes.

To make them as cake don’t use the above, use –

¼ cup butter

1 egg

½ cup buttermilk

½ cup molasses

1 ½ cups flour

¼ cup sugar

1 teaspoon baking powder

¼ teaspoon baking soda

¼ teaspoon salt

1 teaspoon cinnamon

1 teaspoon ginger

1 teaspoon allspice

1 teaspoon cloves

Mix and pour into a buttered and floured loaf pan and bake at 350 for 30 minutes.

Icing

½ cup butter

1 egg

2 pounds confectioner’s sugar

Mix together

Brandy

Add slowly to previous until a little less than frosting consistency, and spread over cake

 

Prosciutto wrapped Dates

40 whole pitted dates

2 package prosciutto (10 slices), sliced lengthwise

4 ounces blue cheese

Cut one side of the dates and stuff with blue cheese. Wrap each date in a strip of prosciutto and secure with a toothpick. Keep chilled.

1/4 cup balsamic vinegar

Simmer over medium/low heat until syrupy.  Drizzle on dates and serve.

 

Merlot Chili

2 pounds ground sirloin

1 cup chopped onion

3 minced garlic cloves

Brown in olive oil.  Drain and rinse.

1 tablespoon Worcestershire

1 cup sliced carrots

1 cup sliced mushrooms

1 cup chopped tomatoes

1/2 cup Merlot

1/2 cup water

6 oz tomato paste

3 tablespoons chili powder

1 1/2 teaspoon basil

1/2 teaspoon oregano

1/2 teaspoon crushed red pepper

Add to previous and cover.  Simmer 2 hours.  Serve with cheddar and green onions.

 

Wine Cake

1/2 cup butter

1 cup sugar

Cream together.  Preheat 350.

2 eggs

Mix with previous.

1 1/2 cups flour

1 teaspoon baking powder

1 cup chopped walnuts

1/4 teaspoon baking soda

2/3 cup sweet ruby port

Mix with previous.  Pour into buttered floured tube pan, and bake 30 minutes.

 

Medlar and Walnut Cookies

Medlars were once only eaten by royalty and then only during Advent, because that is when they ripen and are ready right at Advent.  Although you can grow your own in some states, fresh medlars are nigh on impossible to find fresh so this recipe uses the jelly which can be found online.

½ cup butter

½ cup sugar

Preheat oven to 350.  Cream together.

1 egg

1 tablespoon Amaretto

Add to previous.

7/8 cup flour

½ cup walnuts

Mix with previous and drop by teaspoons onto buttered cookie sheets.  Leave room to expand.

Medlar Jelly

Into each cookie make a tiny well with the back of a spoon and put a ¼ of a teaspoon Medlar jelly into it.  Bake 25 minutes or until edges are lightly browned.  Cool.  Sift confec­tioner’s sugar generously over the top.

 

Sautéed New York steaks with Mushroom Port Sauce

1 pound New York steak

4 teaspoons Worcestershire sauce

1/4 teaspoon dried thyme

Olive oil

Sauté.

1 pound sliced mushrooms

1 small clove garlic

Sauté until liquid evaporated.

1 cup beef stock

1/4 cup port

1 tablespoon balsamic vinegar

Add to previous and simmer with mushrooms until 3/4 cup, about 15 minutes.  Pour over steaks.  Top with raw chopped tomatoes.
