Autumnal Equinox Recipes

Blackberry Pizzelle (Michaelmas Waffles)

3 eggs

¼ cup oil

1 teaspoon blackberry extract

1 ½ cups flour

1 teaspoon baking soda

¾ cup sugar

Preheat the pizzelle maker.

Beat the eggs smooth.  Blend in the extract and oil.  Mix the dry ingredients and add to the egg mixture. It would be stiff and sticky.  Add water by the tablespoon until the dough drops ribbon like from a spoon, like pancake batter.

Bake about 20 seconds or until golden.

Makes 40 cookies

 

Smoked Chicken and Fruited Wild Rice

1 cup rice

3/4 cup water

Make rice, just like it says on the side of the bag.

1/4 cup orange juice

3 tablespoons balsamic vinegar

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon grated orange peel

1 teaspoon grated lemon peel

1/2 teaspoon black pepper

Mix well, set aside.

1 cup halved green grapes

3 chopped green onions

2 large chopped sectioned navel oranges

1/2 cup chopped fresh parsley

1 pound chopped smoked chicken

Add to rice and toss with sauce.

 

Riesling Pumpkin Soup

1/4 cup butter

1 cup chopped onions

3 cloves crushed garlic

1 teaspoon Cajun spices (see Blackened Catfish)

1/4 teaspoon cinnamon

Sauté.

2 cups chicken stock

1 cup Riesling or white wine

1 pound pumpkin (from a can is fine)

1 cup heavy cream

Add to previous and simmer.

 

Tropical Sweet Potatoes

2 pounds yams

Bake yams till soft.  Peel and crush.  Preheat oven to 350.

½ cup crushed pineapple

1 teaspoon vanilla

1 teaspoon rum

Mix with previous.  Bake till starts to brown.

 

Maple Brussel Sprouts

1 pound brussel sprouts cut in half

2 cloves minced garlic

Pepper to taste

Olive oil

Sauté until golden brown.

1 Tb maple syrup, or to taste

Drizzle over the sprouts, heat trough and serve.

 

Equinox Shortbread

¾ cup butter

¼ cup sugar

2 cups flour

Preheat oven to 350. Mix all ingredients and roll dough into ½ thick sheet on a lightly floured board.  Cut into shapes, preferably suns and moons, and place ½ inch apart on ungreased cookie sheet.  Bake 20 minutes. Set to cool completely.

½ cup chocolate

Melt in microwave or in double boiler.  Dip cookies halfway into chocolate. Let harden on wax paper.
