Buffalo wings

¼ cup of hot sauce

1 clove garlic, minced

¼ cup olive oil

12 chicken wings

Marinate a few hours or overnight.  Roast over fire or on barbeque.  Turn frequently until golden and cooked through – about 20 minutes.


Blackened Catfish

3 tablespoons paprika

1 tablespoon garlic powder

1 tablespoon cayenne pepper

2 1/2 tablespoons pepper

1 teaspoons thyme

1 teaspoon oregano

Mix together in a spice jar because you won’t use all of it.  You can use this for anything that says Cajun spices.

Catfish fillets


Fry fillets in butter and sprinkle with spices, the more the hotter.  A teaspoon is enough, however others think you should bread the fish with the spices, your choice.


Triple Berry Pie


½ cup powdered honey

3 tablespoons arrowroot


1 cup blackberries, halved

2 cups raspberries

1 ½ cups blueberries

Add to previous and stir gently to coat, let sit while you make crust or at least 15 minutes.


Pie Crust (or use store bought)

1 ½ cups flour

¼ cup shortening

¼ cup butter

4 – 5 tablespoons icy cold water

Cut the shortening and butter into the flour until it resembles dusty peas. Sprinkle the water one tablespoon at a time, mixing after each until the dough is formed.  Cut in half and roll out into two crusts.

Put one in pie pan, then fill with berry mixture (minus the juice at the bottom) and cover with the second, sealing at the edges and cutting a few slices in the top.  Bake 375F for about 50 minutes.  Check it when the crust is done the pie is done.
