Baby Spinach Salad with Flowers

1 pound fresh spinach

2 chopped hard-boiled eggs

1 chopped tomato

1 tablespoon chopped onion

1 tablespoon chopped cooked bacon

¼ cup of edible flowers

Mix well.

 

¼ cup sugar

1 teaspoon salt

1 teaspoon dry mustard

1/3 cup balsamic vinegar

¼ cup olive oil

1 ½ cups cottage cheese

Mix then drizzle over salad.

 

Lemon Raspberry Cookies

1 cup butter

¾ cup sugar

¾ cup brown sugar

Beat until creamy.

 

1 tablespoon Chambord Liqueur

1 tablespoon lemon juice

½ teaspoon lemon peel

2 eggs

Preheat oven to 375.  Mix well with previous.

 

2 ¼ cups flour

1 teaspoon baking soda

1 teaspoon salt

Combine with previous.  Drop by teaspoons onto ungreased cookie sheet and bake 10 minutes or until golden brown.

 

Lemon Sorbet

7 large lemons

Juice and hollow out rinds keeping them intact.

 

3/4 cup sugar

1/2 cup water

Over medium heavy melt into syrup, remove from heat and add juice.  Add to previous and freeze until firm.  Freeze rinds separately.  When sorbet is frozen serve in rinds.

 

Chilled Chicken Salad

2 tablespoons green onions

2 tablespoons white wine

Simmer until all wine has been evaporated and remove from heat.

 

2 cups mayonnaise

1 tablespoon dissolved chicken glaze

Pinch of cayenne

Mix with previous.

 

1 pound roasted chicken breast, torn into strips

Add sauce and spread on toast.
