Spring Equinox Recipes

Hot Cross Buns

2 cups Milk

Heat stirring constantly until warm about 110F.

1 package (2 1/4 Teaspoons) Active Dry Yeast

Sprinkle over previous.

4 cups Flour

¾ teaspoon baking powder

½ teaspoon baking soda

2 teaspoons salt

¾ cup sugar

½ cup extra light olive oil

1 teaspoon Cinnamon

1/2 cup Raisins

Mix. Then add to previous and mix well.  Allow to rise in a warm place for an hour.

½ cup flour

Knead into dough.  Roll into golf ball size balls and put on a lightly greased cookie sheet. Cover and allow to rise in a warm place for another hour.
Preheat oven to 400F

1 whole Egg White

Whisk and then brush onto the buns.  Then bake 20 minutes until golden brown.  Cool on a wire rack.


½ cup butter

1 egg

2 pounds confectioner’s sugar

Mix together.


Add slowly to previous until a little less than frosting consistency.  Then use a piping bag to make a cross on each cooled bun.


Baby Spinach Salad with Flowers

1 pound fresh spinach

2 chopped hard-boiled eggs

1 chopped tomato

1 tablespoon chopped onion

1 tablespoon chopped cooked bacon

¼ cup of edible flowers

Mix well.

¼ cup sugar

1 teaspoon salt

1 teaspoon dry mustard

1/3 cup balsamic vinegar

¼ cup olive oil

1 ½ cups cottage cheese

Mix then drizzle over salad.


Three Herbed Chicken

1 pound chicken breast

1 tablespoon olive oil

1 minced garlic clove


1 cup chicken stock

1 teaspoon tarragon

1 teaspoon basil

1 teaspoon parsley

Add to previous and simmer 5 minutes.  Remove chicken and reduce sauce to 1/3 cup.

1/4 cup heavy cream

Add to sauce and boil, stirring, until reduced.  Pour over chick­en.


Equinox Shortbread

¾ cup butter

¼ cup sugar

2 cups flour

Preheat oven to 350. Mix all ingredients and roll dough into ½ thick sheet on a lightly floured board.  Cut into shapes, preferably suns and moons, and place ½ inch apart on ungreased cookie sheet.  Bake 20 minutes. Set to cool completely.

½ cup chocolate

Melt in microwave or in double boiler.  Dip cookies halfway into chocolate. Let harden on wax paper.
